Thanksgiving desserts-Fresh Apple Cake

As a child, growing up in Kentucky, I would often visit my aunt. I always begged her to make this cake for me, and she would always say, "You know what you have to do". I had to go get the apples out of the cellar, peel them, chop them, and then watch my baby cousin while she baked the cake. It seemed like a lot of work to a kid, but it was sure worth it.



Fresh Apple Cake

2 cups sugar

3 eggs

1 1/2 cups vegetable oil

1/4 cup orange juice

3 cups flour

1 teaspoon baking soda

1/4 teaspoon salt

1 Tablespoon cinnamon

1 Tablespoon vanilla

1 teaspoon rum flavoring

3 cups peeled and finely chopped apples

1 cup shredded coconut

1 cup chopped pecans

Sauce

1/2 cup (1 stick) butter

1 cup sugar

1/2 cup buttermilk

1/2 teaspoon baking soda

Heat oven to 325. Lightly grease and flour 10" bundt or tube pan. In electric mixer bowl, beat sugar, oil, eggs, juice, vanilla, flour, baking soda, cinnamon and salt together until just combined. Scrape down sides of bowl and stir in by hand: apples, and if using, coconut, and pecans. Pour into prepared pan and bake until tester comes out clean, about 50-60 minutes (could be longer) Just before cake is done, make the sauce. Melt the butter in a large saucepan, stir in the sugar, buttermilk and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Prick surface with toothpick, and pour on soaking syrup quickly while cake is still hot and in pan. Cool to room temperature (about an hour). Invert and remove cake.
