Dinner rut. *update*

Tomorrow I am having a family dinner. Roughly 8 people. I have 2 meats planned, and 2 pretty easy sides (homemade mashed potatoes and steamed great beans). My mom offered to bring dessert and maybe dinner rolls (if she has time).

I am browsing for ideas... simple would be great.



My oh so simple menu

Ham

Boneless turkey best (it is a boneless Jeneo one, it can go in the crockpot)

Stuffing

Mashed potatoes

Steamed green beans

I am also making a fresh veggie platter, spinach dip, that cheesecake creation Michigan mom recommends and different desserts.


My mom and sister are also bringing items, I just don't know what. Dinner will be around 5 or so my time.

I don't have a picture, but this is pretty, easy, and festive looking.  Tastes good, too!

Layered Party Slaw (this is a favorite of ours)

  • 1 small head cabbage, shredded
  • 1/2 medium head cauliflower, cut into bite size pieces
  • 8 strips bacon, cooked and crumbled
  • 2 c. frozen green peas, thawed
  • 2 c. fresh mushrooms, sliced
  • 1/2 c. green onion, sliced
  • 1/2 c. grated Parmesan cheese
  • 1 1/4 c. Marzetti slaw dressing
  • 1 tomato

In a large glass serving bowl layer the first 7 ingredients, using only 1/2 of the bacon.  Top with slaw dressing and remaining bacon.  Cover and refrigerate several hours or overnight.  Cut tomato into wedges and arrange on top of the salad before serving.

We served this at our wedding (a week before Christmas)

Layered Christmas Jello Salad


  • 2 3-oz. boxes lime Jello
  • 1 3-oz. box lemon Jello
  • 2 3-oz. boxes cherry, cranberry, or raspberry jello
  • 5 c. boiling water, divided
  • 2 c. cold water, divided
  • 15 large or 1 1/2 c. mini marshmallows
  • 8 oz. can crushed pineapple, drained
  • 1 c. whipping cream, whipped

Mix lime Jello with 2 c. boiling water.  Stir until dissolved.  Add 2 c. cold water and pour into 9 x 13 dish.  Refrigerate until set. 

Dissolve lemon Jello in 1 c. boiling water.  Stir in marshmallows until melted.  Fold in crushed pineapple and whipped cream.  Gently spread on top of lime Jello and refrigerate until set.

Mix red Jellow ith 2 c. boiling water and stir until dissolved.  Add 2 c. cold water and let set until lightly set; spoon over lemon Jello mixture.  Refrigerate until firm.

another appetizer

Cranberry Cream Cheese Spread:
8 oz. cream cheese, softened
1/2 c. sour cream
2 Tbsp. honey
1/4 tsp. cinnamon
1 15 oz. can whole berry cranberry sauce
1/3 c. slivered almonds (optional)

Mix the first 4 ingredients until smooth. Spread evenly on a plate or serving dish. Stir cranberry sauce until it spreads easily; top cream cheese mixture with cranberry sauce. Sprinkle with almonds if desired and refrigerate for 2 to 3 hours before serving with crackers.

Vegetables Au Gratin

* this is a delicious veggie side dish that everyone will enjoy!*

  • 1 10 3/4 oz. can cheddar cheese soup
  • 1/2 c. shredded cheddar cheese
  • 1/2 c. sour cream
  • 1 medium red bell pepper, chopped
  • 16 oz. bag frozen broccoli/cauliflower/carrot mix, thawed
  • 1 1/2 c. cheddar cheese crackers, crushed
  • 2 Tbsp. butter, melted

Mix soup, cheese, and sour cream together.  Stir in veggies.  Put in a greased baking dish.  Mix melted butter and cheese cracker crumbs together with a fork and sprinkle evenly over veggie mixture.  Bake at 375°F for 30 to 35 minutes.

Here's a DELICIOUS sweet treat dip:

Chocolate chip Cheesecake Dip

  • 8 oz. cream cheese
  • 1/2 tsp. vanilla
  • 1/2 c. softened butter
  • 3/4 c. powdered sugar
  • 2 Tbsp. brown sugar
  • 3/4 c. chocolate chips (can be mini or regular size)
  • 1/2 c. chopped pecans (optional)

Mix & chill.  Serve with graham crackers.

 What about a salad? Simple and who doesn't like salad? This is good and can be prepared ahead.

Christmas Crunch Salad
 
With its creamy dressing and colorful vegetables, this salad is lovely and refreshing. Make it before you head out caroling, and when you return, guests' compliments will be music to your ears. -Mary Anne McWhirter, Pearland, Texas
 
 
TOTAL TIME: Prep: 15 min. + chilling
MAKES: 16-18 servings

Ingredients

4 cups fresh broccoli florets (about 3/4 pound)
  4 cups fresh cauliflowerets (about 3/4 pound)
  1 medium red onion, chopped
  2 cups cherry tomatoes, halved
  DRESSING:
  1 cup mayonnaise
1/2 cup sour cream
  1 to 2 tablespoons sugar
  1 tablespoon vinegar
  Salt and pepper to taste

Directions

  1. In a large salad bowl, combine vegetables. Whisk the dressing ingredients until smooth; pour over vegetables and toss to coat. Cover and chill for at least 2 hours. Yield: 16-18 servings.
