Chunky Mushroom Barley Soup

About This Recipe

"I love mushrooms and this soup is quite good"

Ingredients

    • 2 tablespoons vegetable oil
    • 1 medium onion, chopped
    • 1 (8 ounce) packages white button mushrooms, sliced
    • 2 tablespoons flour
    • 1 bay leaf
    • 3 cups chicken broth
    • 1/3 cup barley
    • salt and black pepper

Directions

  1. Heat oil in a large pot. Add mushrooms and onions and cook stirring for about 8 Minutes.
  2. Reduce heat to low. Stir in the flour.
  3. Add the broth in a steady stream, mixing continuously to blend with the flour.
  4. Add Barley, Bay Leaf and simmer on low, covered, for 30-40 minutes until the barley is cooked.
  5. Discard bayleaf and season to taste.

I have never had this, but it sounds as if it could be a bit bland.

I think I would add diced carrot for color and a little flavor.

This looks yummy!  I think I'd add some garlic and dill too.   Serve it with garlic or cheese toast.
