What do you use to make your pancakes?

No idea, lol.  It's our family recipe - we've been making them like this since I was a kid and we love them!  Crepe-like texture, full of protein, and doesn't fall apart the second you put syrup on them.  Yum!  My recipe is:

6 eggs

1 cup cottage cheese

1/4 cup milk

1/4 cup veggie oil

1 tsp vanilla extract

1/2 cup flour

Add all to a blender and blend.  Batter will be thin at first, but will thicken up as it sits for a bit while the griddle/skillet heats up.
