Chili
1 ½ pounds ground beef
1 large onion, chopped
4 cloves garlic, minced
Jalapeno Peppers
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon cayenne pepper
½ teaspoon crushed red pepper
½ teaspoon dry mustard
Dash pepper
Couple dashes Lawry's season salt
28 oz. can diced tomatoes, undrained
15 oz. can red kidney beans, drained and rinsed
15.5 oz. can chili beans, undrained
2 tablespoons hot sauce
Shredded cheddar, chopped onion, sour cream to garnish
Brown beef in large Dutch oven over medium high heat until browned, drain.
Add onion, garlic, jalapenos, chili powder, cumin, cayenne pepper, red pepper, dry mustard, pepper, season salt. Cook until onions begin to turn clear, stirring occasionally. Add hot sauce, cook 2-3 minutes.
Add tomatoes with juice and bring to a slow boil. Add beans. Reduce heat to medium and bring to a simmer. Simmer 10-15 minutes.
4-6 servings
I am not a crock pot fan at all. Even when I make chili, I make it on the stove. I just can't get into it, LOL.
Veggie Beef Soup
1 lb. stew meat
1 bag soup veggies
1 can diced tomatoes
1/2 head of cabbage, chopped
salt, to taste
Steak seasoning, to taste
Put all ingredients in crock pot. Cover ingredients with water (or water/beef broth mixture). Set on high for about 7 hours. It is good served with a little shredded cheese on top!
Salsa chicken. I can corn drained.1 can black beans drained and rinsed. 2 cups salsa. Place chicken in slow cooker place all ingredients on top with about 1 cup water. Cook, serve over rice. Oh, and you can season the chicken as you like.
And I like a good roast in there too. Falls apart when you take it out. It's the best. I have no recipe. Just season it as you like. I use whatever I have on hand.

And OMG that's a lot of work for chili!
My chili is on the stove top. You brown 2lbs ground beef, drain, and add a packet of taco seasoning. Then add 3 cans of Hanover chili beans (in sauce), and 1 jar of Picante sauce. Let it simmer 15 minutes or so and you're ready to eat. It's even better as leftovers! That simple recipie took 3rd place at 3 different chili cookoffs!

I should have mentioned that when DH and I first started experimenting with our chili recipe, we did it on the stove top. Now, I brown the meat, throw everything in the crock pot and cook it on low all day. It is much better in the slow cooker, the flavors have time to "marry" lol. Just yummy!
