What to do in the Orlando area?

It seems that all there is to do in the Orlando area is theme parks or shopping. We're bored, we do that every weekend. But we can't seem to decide on what to do, do you have any suggestions?

 Thank you all for the suggestions! Some of them I had already heard of, but most I hadn't!

The Science Center is a little more than what we're willing to spend at the moment, but I'll keep it in mind!
