I saw this in The Stir and now I really, really want some!
Summer is NOT over! So what if the kids are back in school? It's still sunny and warm and the produce aisle at the grocery store is still stocked with summertime fruit. Of course -- it's true that before long we'll be forced to make due for months with nothing but apples and pears, so we might as well use the last peaches of the season (my personal favorite) in as many recipes as possible.
Like this Summery Peach Cooler from DashRecipes.com! It's sweet and amazing, like a fizzy fuzzy navel (sans alcohol). Although I suppose a dash of peach schnapps couldn't hurt. Either way, yum. Peaches.
Summery Peach Cooler
1 1/2 cups Sprite (or other lemon-lime soda)
1 tsp lime juice
1 very ripe peach, peeled and sliced (reserve 2 slices)
2 scoops of vanilla or peach ice cream
In a blender, whirl soda, lime juice, and peach. Pour mixture into 2 tall glasses. Add a scoop of ice cream to each glass and garnish with a slice of peach.
