Posted by   + Show Post

After a long break I signed up for a Bountiful Basket again, and now I need to figure out what to do with the following:

1 head of cauliflower (will probably just cut it up and eat it all myself, but a nice cheesy cauliflower soup sounds amaaaazing)

2 giant! sweet potatoes

2 bunches of radishes - i'm not a fan of radishes really.

Just not things we eat. We are a household of semi-picky eaters.

lol ironically I have all those ingredients BUT sweet potatoes!

Here, try this one, it's a little simpler.

Sweet Potato Brownies

1/4 cup whole wheat flour
1/4 cup all-purpose flour
1/4 tsp baking powder
1/2 cup unsweetened cocoa powder
1/4 tsp salt
2/3 cup cooked mashed sweet potato (or yam)
1/4 cup agave nectar
1/4 cup maple syrup
1 tsp vanilla extract
2 tbsp oil
2 tbsp applesauce
1 egg, lightly beaten

Grease 8" square baking pan and preheat oven to 350F. In a bowl, combine flours, baking powder, cocoa and salt. In another bowl, mix together remaining ingredients. Add dry ingredients to the sweet potato mixture and stir until combined. Pour batter into baking pan and bake for 20 minutes. Let cool and cut into squares.

Yeah we don't really eat those things either, that's why I haven't gotten a BB in a while, we tend to put off doing something with certain veggies and they go bad. but the boys all tried radishes raw with ranch dressing and didn't hate them!
