Some type of pasta or homemade soup.  Those are easy.  Most times when I make spaghetti sauce I try to make extra and then put some in quart freezer bags to have for another time.

Freezing extras for later sure saves time.

We  usually have ring bologna when I don't have time to cook.

Sandwiches, wraps, tacos, burritos, pasta or a few easy casseroles I have.

Sechzuan Peanut Pasta:

While the pasta (for 4-6) is cooking, stir together 1/3c natural peanut butter (not sweetened or salted, with no added fat), 3 tbsp soy sauce, 3 tbsp rice wine vinegar, 3 cloves of garlic, crushed, 1/2 tsp (or a lot more) crushed dried chilies. Add enough water from the pasta pot (1/3-1/2c) to thin to sauce consistency. Toss with drained pasta when it's done.

With a side of greens, or fruit for dessert, this is a quick light meal.

Breakfast for dinner, smoked sausage over sauteed cabbage, carrots and onion, smoked sausage over baked beans, spaghetti & meatsauce, taco cups, with veggies or salad.
