I canned tomatoes for the first time this year. I didn't use any pickling salt, ust the lemon jjuice. Also, the packed the tomatoes tight enough that the juice came above the level of the tomatoes but I would think topping it off with boiling water would be easier than packing everything so tightly.
I have never tried this, but I think it might be worth taking a crack at it.
