1 bag (2 cups) of Andes Mint Baking Chips
1 Sleeve of Ritz Crackers (I know what you're thinking, but trust me)
melt the chocolate in the microwave (i did 30 seconds at a time until it was melted) then dip the ritz crackers one at a time and make sure they are coated evenly. scoop them out with a fork and place them on a cookie sheet lined with wax paper. Let the chocolate harden and eat! (=

I've done this; they come out amazing! I loved thin mints and these are awesome and easy to make. I use those semi-sweet chocolate squares though.
we do the ritz crackers with pb, then dip in chocolate. I think the andes would be heavenly!
