When I'm in the mood (and back when it was only me and hubby) I used to make scrambled eggs, sausage, french toast for my hubby and bring it to our room. I'd make 2 scrambled eggs, 2 sausage links, 1 french toast, and sometimes hash browns. That would be per person. Didn't take too long, the has browns were made in the oven.
I do eggs benedict. That doesn't take too long. I do it my way though. An egg with dippy yolk (white all the way cooked), canadian bacon, and toast. Plus hollandaise sauce (from a packet). It takes way too long to make hollandaise sauce from scratch.
pancakes and sausage.
Easy omelets.....put 2-3 eggs in a ziploc baggie. Add whatever meat, cheese or veggies you want. Zip bag closed and "scramble" ingredient. When ready, drop baggies in pot of boiling water until eggs are cooked.
