Instant Oatmeal Pancakes

A friend shared this recipe and I thought I'd try it out for you guys (and myself).

Ingredients:

1 Tbsp butter or margarine

A packet of instant oatmeal

One egg

Directions:

1. Melt the butter or margarine in a frying pan, keep the temperature on low.

2. Mix the oatmeal and egg together and let them sit for about 30 minutes.

3. Spread it in the frying pan and flip when you feel the first side is done

4. Cook the other side and them remove to a plate.

They're not your usual light and fluffy pancake, but they're tasty and a healthy breakfast option. Plus, the egg adds a little more protein to your breakfast.

I have used steel cut oatmeal to make pancakes and added some apples sauteed in a little butter and brown sugar.

In the mornings for the kids, I usually make them a bacon, egg and cheese burrito and they share it.  I use the real bacon bits, makes it easier and I don't use a lot of them, just enough for some flavor to try and make it somewhat healthy.

Interesting, I wonder if you could mix it the night before? Don't have that much time in the am.

Yum!!! I used to get oatmeal pancakes at a fave restaurant in Mesa, AZ. LOVE!!

No recipes but my dd likes regular pancakes or hard boiled eggs and a bagel for breakfast.

Neat recipe!  I just had to see what it was! I think that putting some baking powder in the mixture would maybe puff it up (or is it baking soda?)
