When I moved to the farming area that I now live in, I decided to teach myself how to can preserves. One recipe that I got from a coworker was for salsa and it's just as good fresh as it it canned.
1 Jalapeno pepper, seeds removed and chopped
4 chopped tomatoes
1 cup chopped green pepper (or any color, really)
1 chopped onion
1/2 cup loosely packed chopped cilantro
3 cloves garlic crushed
1 tsp cumin
1 tsp salt
Make sure you wear rubber gloves when chopping the jalapenos. I learned the hard way that the juice STINGS.
Combine all of the ingredients, except for the lime. Cut lime in half and squeeze over the salsa.Stir, and serve. If you let it sit for a few hours, it tastes even better.
