Eating healthy doesn't mean that you have to give up on tasty meals. I promise. I am a huge fan of using the grill all year long -- not just in the summer -- because I love the flavor it gives. Here's one of my favorite grilled salmon recipes:
1 filet of salmon, skin on, scored into serving pieces
5 tablespoons olive oil
4 garlic cloves, minced
1/4 cup minced fresh (or dried) dill
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon lemon zest, plus lemon wedges for serving
Mix oil, garlic, dill, salt, pepper and lemon zest; brush over salmon to coat.
Grill covered until salmon is opaque throughout (130 on a meat thermometer), 20 minutes or longer, depending on thickness and grill temperature.
