creamy chicken florentine, carrot & raisin or carrot & apple salad depending on whether I have any raisins

 It's been a rough couple of days...I have no idea yet!

 I am low carb and I eat very simple on most nights because Todd is at work and I also don't usually eat a full size meal at dinner or other .. instead I eat tiny little mini meals every 3 hours  (like approx 3 oz meat 3 oz low carb veggie). ....

Today I cooked about almost a week's worth of 3 oz hamburger patties (no bun no condiments etc) , baked a big package of chicken thighs and baked 2 bags of tilapia fish... so I have a variety of 3 oz portiosn of meat for my mini meals. (I have eggs too)

I don't think my family has ever had that. They are so picky.
