When berries are in season, it's the perfect time to buy at freeze them for later. Wash and thoroughly dry them, spread them out on a baking sheet pan (cookie sheet) , making sure they don't touch. Carefully put the pan in the freezer without disturbing the berries. Freeze for a couple of hours until they're hard, and then dislodge them from the pan with a spatula. Put the berries in a zip-lock bag and return to the freezer. This method prevents th berries from freezing together, with can damage their texture. It also permits you to take out exactly the amount you need.
