1 3/4 c flour
2/3 c sugar
1 1/2 sticks unsalted butter, room temp
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
1 large egg
1/3 c jam
extra sugar for rolling
Sift four, salt, baking powder. Set aside.
Cream butter, sugar until light and fluffy. Add vanilla and egg mix until incorporated. Slowly add flour mixture to butter mixture.
Chill one hour.
Roll dough into one inch balls, then roll in sugar. Place two inches aprt n baking sheet. Press thumbprint into rolled dough, about a 1/2 in deep. Fill with jam.
Bake at 350 for 15 minutes or until set, almost golden brown.
Cool on cookie sheet. Makes about 24 cookies
