Butter and Jam thumbprint cookies

Butter and Jam thumbprints

1 3/4 c flour
2/3 c sugar
1 1/2 sticks unsalted butter, room temp
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
1 large egg
1/3 c jam
extra sugar for rolling

Sift four, salt, baking powder. Set aside.

Cream butter, sugar until light and fluffy.  Add vanilla and egg mix until incorporated.  Slowly add flour mixture to butter mixture. 

Chill one hour.

Roll dough into one inch balls, then roll in sugar.  Place two inches aprt n baking sheet.  Press thumbprint into rolled dough, about a 1/2 in deep.  Fill with jam. 

Bake at 350 for 15 minutes or until set, almost golden brown.

Cool on cookie sheet.  Makes about 24 cookies

These sound delish! I'm going to make them next week...I'm a sucker for any kind of butter cookie!!! heh heh

ps Can you stack them to store them or are they messy?? How do you store them? Also in the fridge or on the counter??

I store them in a plastic container at room temp (if they last that long).  I recommend putting a layer of parchment or wax paper between layers of cookies so the jam doesn't stick to the cookie under it.  Have fun making them!

I just made these and Ronica218 - YOU ROCK! They are amazing!!! I loved them...hubby loved them! And we are hoping not to eat the whole batch tonight! ha ha Tomorrow is our first dinner out since having Sadie (10months old) and my gf is babysitting for us (we babysat for them on Friday) so we can go out for hubby's 33rd bday so I made them for her to snack on while we are out...but I think I'll be keeping a few hidden for us!
