Which oil do you bake with?

I want to eliminate vegetable oil completely from all cooking and baking. I have been using olive oil for cooking, but I'm afraid to use it in baking. All baking instructions say to use vegetable oil.
I tried using olive oil when I made pancakes, but it made them super flat.

you can substitute applesauce or another fruit puree instead of vegetable oil when your baking

Coconut oil is great for baking & makes awesome pancakes!

You can also use applesauce for baking. I like it for brownies, it gives a nice texture.

Do you use the coconut oil that comes in the glass jar and looks solid? How do you measure that?
I've been looking at it at the grocery store, but for some reason it intimidates me, lol.

I just dig a measuring spoon in. If you are more comfortable measuring in solid form I suppose you could melt it.
Once you get started on CO there is no going back! Not only is it an awesome food, it is great used topically for anything hair & skin (cuts, rashes, acne, dryness, etc, etc, etc)

I loooove grapeseed oil. It has one of the highest flash points and has SO many health benefits. It's expensive in most markets, but our Costco has a big 2L jug for 7.99. Also, if you live in an area with a lot of Middle Easterners, their markets typically have it in large quantities and cheap. :)
