One egg equals one of the following:
1/4 c applesauce
1/2 smooshed banana (add a little extra baking powder too)
2 tbs ground flax seed + 3 tbs water
1/4 c blended soft tofu
Or you can get ener-g egg replacer in the store, which is essentially potato starch you mix with water.

So you like the flax? I havent tried it because I wonder if it will I've the food a strange taste like the ener-g does. But If it's good, I'll definitely try it, maybe when I make my pumpkin pie this year!
Quoting Baby4us09:jellyfish beat me. I was going to say flaxseed. I use it and my family loves it. they prefer use that over eggs. I was shocked. I love to bake. SO I bought two bags of the stuff. :) Happy baking.
