Gluten free baking?

OK so I have a couple of gluten free all purpose flours. I want to do a gluten free Thanksgiving. I want to do everything from scratch. Has anyone ever made their own pie crusts? Can I just use an all purpose flour? I'm scared to try LOL

Yes, but my issue with the gf flour mix is that you have to use xanthan gum, which I dont like. I really like almond flour and cocont is ok but not my favorite.

Yeah we can't use almond flour due to food allergies and coconut flour is expensive!!

My mom makes her own pie crusts.  It's pretty simple. :)

Cocont flour is expensive but you dont need that much when baking with it. Most recipes call for less than a cup of it but it does use lots of eggs.
As far as the baking mix if you are completly gf dont use xanthan gum because its made from corn but you can uses gum gar instead.

I have in the past but now that my dd can't have soy I can't make a good crust without shortening
