Chicken Broccoli Rice Bake?

I have been searching online for a recipe for something like this and everything calls for campbells soup or "cheese spread" and miracle whip. Anybody have a good, relatively clean and healthy, recipe I can try for dinner tonight??

You can make your own cream of chicken soup at home or buy an organic kind at the grocery. I just replace those things with organic milk and cheese.

I ended up having my bf grill some chicken breast on the George Forman and I made some herb seasoned rice to go with. We deperately need to go grocery shopping and I'm. It a very creative cook (especially after a long day at work. Lol) so options were pretty limited.

Why not just sub out the soup for your own cheese sauce?  I make a cheese sauce at home that is super simple!  You could make one big batch and then just freeze it in cubes or refrigerate it (if you will use it quickly) and it's good on all kinds of things!  It's what I use to make mac and cheese for dh!

Start with a basic roux (butter or CO and flour, equal parts.  The more roux the thicker the sauce)

4 Cups of Milk - add to the roux and bring to a gentle boil 

2 tsp garlic powder & 2 tsp onion powder - add to milk, stir to incorporate

Salt to taste - you can start with 1/2 tsp and decide from there

1 lb of cheese - add once milk is gently boiling and whisk until it's fully incorporated, add more if needed or desired.  I usually use cheddar, but I sometimes do a mix of whatever I have on hand.

That's it!

I've made this with almond milk and daiya cheese many times and it's still just awesome!

we've got to get better at not using the canned soups, we use them alot!

I use it for my broccoli and chicken bake. It's my fiances favorite! 

...but hey, at least everything else I use in it is organic lol

I'll admit the recipes using canned soup look SO EASY. 5 min of prep, toss it in the oven, and you're done.
