Orange Ginger Seafood

8 oz. uncooked rigatoni
12 oz firm white fish, fresh or frozen (thawed)
salt
black pepper
non stick cooking spray
1 c. orange juice, divided
1 tsp cornstarch
2 cloves garlic, minced
2 tsp grated fresh ginger
2-3 tsp. reduced sodium soy sauce
3/4 c finely chopped plum tomatoes, seeded
1 (11 oz) can mandarin oranges


1. cook pasta according to package directions omitting salt. drain and set aside.

2. season fish w/salt & pepper. spray large nonstick skillet w/cooking spray and heat over med-hi heat. add fish; cook 3 mins. each side or until fish flakes with fork and is lightly brown. remove and set aside, keeping warm.
3. stir 1/4 c oj into cornstarch i small bowl until smooth; set aside.
4. heat 1 tblsp. oj in same skillet over med-low heat, scraping browned bits from bottom of skillet. add garlic and ginger; cook and stir 2 mins. reserving 1/4 c juice add remaining oj and soy sauce to skillet. bring to a boil over med-hi heat. add coronstantly until slightly thickened. stir in tomatoes;heat 1 min. remove from heat; stir in oranges.
5. divide pasta among 4 plates, top w/fish. spoon sauce over fish.
