Baked Cod with Tomatoes & Olives

1 pound cod fillets (about 4 fillets) cut into  2 inch pcs
salt and pepper
1 can (14.5 oz) diced italian style tomatoes, drained
2 tbls chopped pitted black olives
1 tsp minced garlic
2 tbls chopped fresh parsley

1. Preheat oven to 400. Spray 13x9 pan with non-stick cooking spray. Arrange fillets in pan, season w/salt & pepper.
2. Combine tomatoes, olives and garlic in med bowl. Spoon over fish.
3. Bake 20 mins or until fish flakes. Sprinkle w/parsley.

Serving Suggestion:
Serve w/buttered french bread, sprinkled w/paprika and oregano, and broiled until lightly toasted.

I'm not a big fish fan, but this sounds really yummy. I think I will try it w/ chichen.
