Tried it.  Wound up with limp pancakes that turned soggy with syrup.

Anyone have a better recommendation/recipe?  I'd really like to do pancakes on Christmas morning.  :-P

I didn't have trouble using GF Bisquick for pancakes, but it isn't my favorite. My family's favorite pancake mix is Pamela's Pancake and Baking Mix.

I wrote about Bisquick here: http://celiacfamily.com/fun-pancakes-gf-bisquick-giveaway/

Hope your Christmas morning pancakes are perfectly gluten-free!

LoL, well, before I came back to this post, I tried a recipe by Jules Shepard (from Jules Gluten Free - I buy her all-purpose flour).

The pancakes were good! I'll need a little more practice to get them the right shape, but they were crispy on the outside and fluffy on the inside. And perfectly golden brown too.

Anyway, here's a link to the recipe I used this morning: http://www.julesglutenfree.com/v/vspfiles/assets/images/recipes/pdfs/pancakes1.pdf

I tried Red Mill GF Pancake mix and it was okay. But to me, the Bisquick pancakes were pretty good.

wow, I didnt have this experience at all with bisquick. did you use milk and egg per the directions? I havent tried to use any alternative ingredients as i find doing that with gf baking can greatly affect it.
