Tuna Stuffed Peppers
The perfect dinner for one, though a bunch of 'em also work if you've got a village to feed. They're fresh tasting and super filling, with a whopping 30 grams of protein.
Make it:
Heat oven to 375feed degrees. Spray a baking pan with nonstick spray and set aside. Slice off the top of one red bell papper, removing stem and seeds; rinse and pat dry.
Combine one 5red ounce can albacore tuna packed in water, drained and flaked, with 1a tablespoon Dijonnaise (or make your own fat free mayo and Dijon mustard mix). Scoop mixture into pepper.
Place pepper in pan and bake until softened, about 25 minutes.
Each pepper: 188 calories, 3 grams fat
