ROLL UPS / BUNDLES/ WRAPS SECTION

~~BROCCOLI HAM ROLL-UPS~~
SERVINGS:12
OVEN TIME: 40 MINUTES PLUS
OVEN TEMP: 350

TIP:THESE ARE GREAT FOR PARTIES, OR A A GREAT PUTLUCK, AND SO SIMPLE. YOU CAN FREEZE BEFORE BAKING TO MAKE AHEAD AND PULL OUT OF THE FREEZER FOR A QUICK MEAL ALSO.

10 OZ. FROZEN BROCCOLI, CHOPPED
1 CAN CREAM OF MUSHROOM SOUP
1 CUP DRY BREAD CRUMBS
1/4 CUP SHREDDED CHEDDAR CHEESE
1 TBSP. CHOPPED ONION
1 1/2 TSP. DICED PIMENTOS
1/8 TSP. RUBBED SAGE
1/8 TSP. DRIED ROSEMARY, CRUSHED
1/8 TSP. DRIED THYME
DASH BLACK PEPPER
12 SLICES FULLY COOKED HAM (THEN ABOUT 1/8 INCH THICK)

COOK BROCCOLI ACCORDING TO PKG. DIRECTIONS; DRAIN.
IN A BOWL, COMBINE THE SOUP, BREAD CRUMBS, CHEESE, ONION, PIMENTOS AND SEASONINGS.
ADD BROCCOLI; MIX WELL.
SPOON 1/4 CUP ONTO EACH SLICE OF HAM.
ROLL UP AND PLACE IN AN UNGREASED 13 X 9 X2 INCH BAKING DISH
COVER AND BAKE AT 350 FOR 40 MINUTES OR TILL HEATED THROUGH, IF YOU ARE NOT SURE THE CHEESE WILL ME;T THROUGH, BUT TRY NOT TO LET THAT HAPPEN SO THAT YOU WILL HAVE YOUR CHEESE INSIDE FOR ADDED FLAVOR.

These are a really good appetizer, really simple and really easy!

Pickle Roll Ups

deli meat--ham, salami, etc... any kind you like!
8 oz block cream cheese
dill pickle spears, drained

Spread cream cheese in a thin layer on meat; roll pickle spear up inside.  Secure with a toothpick and chill until serving.

Cut these into 1-2" slices to make pinwheel appetizers, or serve them whole for lunch!


Grilled Chicken Wraps

1 pkg. flour tortillas or flat bread (I like the flat-out breads, either sundried tomato or spinach!!)
1 pkg. Tyson chicken strips (The Southwest flavor is my favorite!)
8 oz. block cream cheese
leaf lettuce
cherry tomatoes
sliced onion
sliced green pepper
shredded cheese
optional:  bacon, cooked, drained, and crumbled; ranch dressing
Spread cream cheese on bread; top with lettuce, meat, tomatoes, onions, green pepper, and bacon and a little bit of ranch dressing if you like.  Roll up.


Fried Chicken Wraps
1 pkg flour tortillas
2-3 packaged chicken tenders per person
lettuce
green onions, chopped
shredded cheddar cheese
Ranch dressing or bbq sauce
Prepare chicken tenders according to package directions.  Spread tortillas with sauce, add lettuce (either shreds or leaves, whatever you like!), onions, and cheese.  Wrap up.

Lasagne Roll Ups

12 lasagne noodles, prepared and drained
12 oz pkg cottage cheese
1 egg
1/4 c. grated parmesan cheese
1 Tbsp. parsley flakes
1 tsp salt
1/2 tsp pepper
2 c. mozzarella cheese, separated
1 jar spaghetti sauce

Combine cottage cheese with egg, parmesan cheese, parsley, salt and pepper.  Sprinkle 1/2 of mozzarella cheese on each lasagne noodle (pizza style!), then spoon equal amounts of filling onto one end of each lasagne noodle.  Roll up; place in baking dish, seam down.  Pour sauce over roll ups, top with the other half of mozzarella.  Cover with foil; bake at 350 for 45 minutes.

Chicken Bundles

1 5oz. can chicken -drained (or 1 cup cooked chicked, shredded)
1 3 oz. pkg cream cheese
1 tsp chopped pimentos
1 TBS sliced green onions with tops
dash of worcestershire sauce
1 pkg cresent rolls

Combine chicken with cream cheese, onion, pimentos & sauce. Separate the cresents; place a rounded TBS. in center of each. Fold up sides & pinch to seal. Bake at 400° on lightly greased baking sheet till golden, 8-10 minutes. Serve warm.

Turkey Roll Ups

1 lb thick (at least 1/8") sliced deli turkey 
1 package stuffing mix
1 can cream of chicken soup
1/2 soup can milk

Prepare Stuffing mix according to directions on box.  Place an even amount in the center of each turkey slice.  Roll up (enchilada style!), place seam-down in a greased 13x9" baking pan. 
Mix soup and milk together, pour on top.  Cover, bake for 30 minutes at 350 degrees.

Simple Greek Chicken Wraps

4 skinless, boneless chicken breast halves cut into bite sized pieces
1/2 c Greek Vinaigrette dressing
4 lettuce leaves
2 tomatoes cut into wedges
1 small red onion, sliced thin
small jar red peppers, drained
8 oz block cream cheese, softened
1 tsp oregano
1/2 tsp dill weed
1/4 c crumbled feta cheese
4 burrito sized tortillas

Saute chicken in dressing until it is cooked through and no longer pink.  Combine cream cheese, feta, oregano and dill.  Heat tortillas, spread cheese mixture on each one then put lettuce leaves in the center of each one, then divide other ingredients between the four tortillas.  Wrap up, cut into pinwheels, serve with cucumber sauce.
You could also serve these on warmed pitas or flatbreads :)

Cucumber Sauce:

1/2 cucumber, halved lengthwise, seeds removed, grated
1/2 of a small onion, grated
8 oz pkg sour cream (I like sour cream better, but you can use plain yogurt if you like!)
1 tsp lemon juice
1 tsp dill weed
2 tsp oregano
salt and pepper to taste
Squeeze all of the liquid from the cucumber and onion, add remaining ingredients.  Mix well, chill until serving. 
Serve on the side for dipping.

Mexican Steak Wrap


3 oz cooked steak thinly sliced
1/4 bottle roasted red peppers
drained and sliced
1/4 cup hot, medium or mild salsa
1/4 cup Mexican blend shredded cheese
1 8 inch flour tortilla

Layer steak, roasted peppers, salsa, and cheese in the middle of the tortilla. Fold in sides then fold down top and fold up bottom. Place on foiled lined 8 x 8 inch pan seam side down and bake at 350 degrees for 15-20 minutes. Serve with sour cream. Makes one serving.

Note: To make it a little spicier add a few dashes of bottled hot pepper sauce.

Taco Wraps

6-8 large burrito sized tortillas
1 block cream cheese
1 envelope taco seasoning
1 lb meat--your choice (chicken chunks, shredded, ground, or deli sliced roast beef)
taco toppings:
lettuce
cheese
tomato
onion
black olives
jalapenos or chilies

taco sauce to serve on the side

Combine taco seasoning with cream cheese.  Spread thick onto each tortilla.  Top with meat and toppings, roll up.  Serve with taco sauce or guacamole!
