Cherry Peach Cobbler
 
1 can (21 ounces) cherry pie filling
1 can (8 1/2 ounces) sliced peaches,
   drained and halved
2 tsp lemon juice
1/2 tsp ground cinnamon
 
Biscuit Topping:
1 cup biscuit/baking mix
4 tsp sugar, divided
3 tbsp milk
2 tbsp butter, melted
1 tsp grated lemon peel
1/8 tsp ground cinnamon
3 cups vanilla ice cream
 
In a greased microwave-safe 8 inch square baking dish, combine the pie filling,
peaches, lemon juice, and the cinnamon.  Microwave, uncovered, on high  for 3-4
minutes or until heated through.  Stir once.   In a small bowl, combine the
biscuit mix, 3 teaspoons sugar, milk, butter, and the lemon peel.  Drop by
rounded tablespoonfuls onto the filling.  Combine the cinnamon and the remaining
sugar.  Sprinkle over the topping.  Bake at 400F for 17-19 minutes or until
golden brown.  Serve warm with ice cream.  Makes 6 servings
