Bruschetta Romana
1 jar (7 ounces) roasted red bell pepers, drained and cut into 1/2 inch strips
1 or 2 medium cloves of garlic, finely chopped
2 tbsp chopped fresh parsley - or -
1 tsp dried parsley flakes
2 tbsp shredded Parmesan cheese
1 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
12 baguette slices, each 1/2 inch thick
Heat oven to 450 F. Mix all the ingredients except the baguette slices. Place the baguette slices on an ungreased cookie sheet. Spoon the bell pepper mixture onto the bread slices. Bake for 6 to 8 minutes or until the edges are golden brown.
