WE were givin a venison shoulder for Christmas & i have no idea what to do with it, a little help please? the only thing i know about venison is that u have to marinade it...
You can cook venison any way you would cook beef. The secret in cooking venison is to thaw it and cook it slowly. I have a Dutch oven full cooking right now. I cook it most often like Swiss steak with tomatoes, onions, celery, garlic, bay leaves, and Italian herbs. I will take half of what I am cooking now and shred it and then add BQ sauce to it. We are having my husbands family get together tomorrow. They love it on hamburger buns. Good luck with your venison. Our family can't tell the difference when I cook it between beef and venison.
So you have a smoker or a grill?
Dales is WONDERFUL for venison!!!! so is game tame. (Both can be found at Wal-Mart)
If I had a shoulder and had a grill I would marinate it in Dales and sprite over night. Then I would wrap it up in foil with some onions. Put it on the grill or in the oven (about 150) and SLOW COOK it !!!
If it hasn't been soaked in ice or salt water, you will want to do that for a couple of hours. It helps take all of the blood out which is where all of the game taste comes from.

We actually got some too for the holidays, we cooked in the crock pot for 8 hours on high with a can of Campbells Golden Mushroom soup, and then fill up the empty can with water and threw it in the crock pot. When it was ready it just fell apart, and my husband LOVED IT!
Is there somewhere you can take it and get some ground, cut into steaks,etc? You can use the ground vinison to make chili--it is awesome. Also, cube some and make stew. You do not have to marinade the meat to do this.
since it's a shoulder, i would say maybe grind some up and make a couple of roasts out of it, you can make venison burger, just add some bacon to the ground mix (ground with the meat) and patty it up and fry it or grill it. it's great. you don't HAVE to marinade it, i've been eating venison all my life and it's good straight fried in a pan with some butter, soysauce, salt and pepper. but since it's a shoulder, i recomend either burger it up, and make roasts or cube it up and make stew meat. and roasts. other than that, good luck hon, and enjoy the venison.
My husband hunts and so did my dad so all I have ever eatten was deer meat. You can pretty much do anything to it that you would do to beef. The only diffence is that its a leaner meat and will dry out quicker then beef. For a shoulder roast I would probably make up some BBQ Sauce and cook it in a dutch oven slow for about 8 hours or so then shred it up and put it on buns. You can also put in a crockpot with some seasoning, carrots, and onions and add about a cup of water and a can of cola. My husband is outside skinning out a deer right now and you can bet we will be having deer steaks, fried backstrap, deer chili, heck I even take it to get processed and get hamburger and sausage made. Its awesome and the best part its free!
