I have a ton of cooked pork chops- need ideas please

Ive done them with bbq sauce, pork fried rice, atop pasta and sauce, and with rice and cream of chicken soup with veggies. are there any other things (on the healthier side) that i can do with them? oh im totally down with making meals to freeze !

How about pork jambalaya, or pork quessidilla's. Use low fat cheese and whole wheat tortillas for the quessidillas.

The jambalaya sounds awesome.  Especially if you use a homemade chicken stock.  I love to throw pork chops in the soup(bone-in or boneless) to simmer till they're tender and break them up.

If you slow braise them, they'd probably make an excellent goulash and/or chili meat.  I do that sometimes too.  And we always put pork neckbones in our spaghetti sauce to cook. It adds an excellent flavor for the sauce, richer.  Pork chops would work fine for that, too.

French Fried Onion Pork Chops

season chops on both sides, dip chops in egg wash, followed by crushed french fried onions.  Bake @ 350 til done.
