Bacon-Wrapped Little Meat Loaves
1 1/2 pounds Ground Beef, extra lean
1 cup Cheddar Cheese, shredded
2 large Eggs
1 package Stuffing Cubes -- Stove-Top type stuffing w/seasoning
8 bacon slices -- cut in half
Heat the oven to 350 degrees F. Mix all of the ingredients together in a large mixing
bowl, except the bacon. Shape the mixture into 8 small loaves. Crisscross 2 of the
half slices of bacon across each loaf, tucking the ends under each loaf. Place the
loaves in a shallow baking pan and bake uncovered for 50 minutes. Let stand for 5 to 10
minutes before serving.
To freeze for later use, freeze loaves in a shallow baking pan that has been wrapped in
foil, or in individual small baking pans, wrapped in foil. Label. Freeze up to 6
months. Thaw overnight in refrigerator, then bake according to directions above.
