Banana Bread Recipe?

Ok, I am looking for a quick and easy banana bread recipe.  I am not a master baker so the easier the better!  I would love any ideas.  Thanks in advance for your help!

3 or 4 ripe bananas, smashed

1/3 cup melted butter

1 cup sugar

1 egg beaten

1 teaspoon vanilla

1 teaspoon baking soda

Pinch of salt

1 1/2 cup of flour


No need for mixer for this recipe.  Preheat oven to 350*F.  With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.  Mix in the sugar, egg, and vanilla.  Sprinkle the baking soda and salt over the mixture and mix in.  Add the flour last, mix.  Pour mixture into a buttered 4x8 inch loaf pan.  Bake for 1 hour.  Cool on rack.  Remove from pan.  Slice to serve.

The above recipe is the one I use. But instead of adding ripe bananas, I add two 6 oz jars of baby food bananas (Gerber) and 1/2 cup of baby oatmeal meal in addition to the flour...sounds gross I know..but it really good and nutrient dense.
