Chunky Pecan Bars
 
For the Crust:
1 1/2 cups flour
1/2 cup packed brown sugar
1/2 cup cold butter, cubed
 
For The Filling:
3 eggs
3/4 cup sugar
3/4 cup dark corn syrup
2 tbsp butter, melted
1 tsp vanilla extract
1 3/4 cups semisweet chocolate chunks
1 1/2 cups coarsely chopped pecans
 
Preheat the oven to 350 F.  Grease a 13 x 9 inch baking pan.  In a small bowl,
combine the flour and brown sugar.  Cut in the butter until crumbly.  Press into
the prepared 13 x 9 inch baking pan.  Bake for 10-15 minutes or until golden
brown.  Meanwhile, in a large bowl, whisk the eggs, sugar, corn syrup, butter,
and vanilla until blended.  Stir in the chocolate chunks and pecans.  Pour over
the crust.  Bake for 20-25 minutes or until set.  Cool completely on a wire
rack.  Cut into bars.  Makes about 6 dozen
