Raspberry filling for a white cake?

Tomorrow is my mom's birthday, and her favorite cake is a white cake with a raspberry filling. Does anyone know how to make a good raspberry filling? I'd like to make it homeade if possible.

Ooohh, I hope somebody does have a recipe.  I LOVE white cake with raspberry filling...except the only recipes I ever see call for just plain raspberry preserves or jelly.  It's just not the same.

Yeah, I was just browsing online for some, and they all say to use raspberry jelly/jam/preserves. That's not what I'm looking for!

Ok, so I found this recipe on the Wilton website.  I have not tried it yet, so I cannot tell you if it is worth a flip.  I personally don't like seeds in my cake, so maybe I will run the raspberries through a sieve...

Raspberry Filling

 

Ingredients:

  • 1 pkg (16 ounces) frozen raspberries packed in sugar thawed
  • 1/3 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon lemon juice

Makes: Filling serves 2 cups.


instructions

Drain raspberries, reserving liquid.

Add enough water to liquid to equal 1 1/4 cups.

In large saucepan, combine liquid, sugar, cornstarch and lemon juice; mix well.

Heat and stir until mixture boils and thickens.

Cool completely.

Stir thawed raspberries into cooled mixture.
