Top Round Roast? how do I...

cook it?  I want to make sure it is tender.... lol I know it's not the best roast for that.  I accidently picked up and bought the wrong one at the store.  So how do I cook it (not crock pot) so that it is nice and tender, and not dry?

FYI Dh and I prefer our meat Med-rare.  I wish it wasn't such a lean cut, so it would end up more like prime rib (since I was craving that) but thats not going to happen, so help me out.

it's a 2 pound roast

two different ways.  either of these .

i use  a baking bag or a  stock oven pot. i make roastbeef with potatoes & carrots or Italian beef. If iam going to be home I put roast in oven at 325 for about  3 hours if it wasn"t frozen.  if. iam going to be gone I put ti on all day, in oven on 250. the bag will keep it moist with the steam.  good luck

In case you wanted the Italin Beef receipe. 

1- roast

pepperoncin, many as you like plus juice

1- package of McCoricks  italian seasoning or garlic & herbs seasoning

Mix all together, cook, until tender,  put roast & juices on hoggie bun or sometimes I use 1 package of beef gravy mix with the juice for  alittle thicker gravy.  we love it.
