Toasted Coconut Cookies

1/2 cup butter
1/2 cup shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 1/2 cups quick-cooking oats
1 1/2 cups flaked coconut, toasted
3/4 cup chopped walnuts, toasted

Preheat the oven to 375 F.  Grease baking sheets.  In a mixing bowl, cream the
butter, shortening, and the sugars until fluffy.  Add the eggs and vanilla.
Beat well.  Combine the flour, baking powder, baking soda, and salt.  Gradually
add to the creamed mixture.  Fold in the oats, coconut, and the oats.  Drop by
tablespoonfuls onto the prepared baking sheets.  Bake for 10-11 minutes or until
golden brown.  Cool for 2-3 minutes  before removing to a wire rack to cool
completely. Yield: about 3 dozen
