Kashmiri Potato Stir Fry
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves:6

Ingredients
6 large potatoes, peeled and cooked
3 cups of broccoli florets
1 cup sliced green beans
6 tablespoons vegetable oil
½ teaspoon black mustard seeds
1 cup sweet corn kernels
½ cup chopped celery
1 chopped red capsicum
1 chopped onion
2 cloves crushed garlic
1 teaspoon garam masala
pinch of cayenne pepper


Method
Dice potatoes when they're cooked.
Cook the broccoli and green beans until just tender.
Heat the oil in a wok or large frying pan until it is very hot.
Throw in the mustard seeds and cook until they begin to 'pop'.
Add all the vegetables.
Reduce the heat and stir fry for about 10 minutes.
Season with the garam masala and cayenne pepper.
Stir fry until thoroughly heated and serve hot.
