Ratatoulli pie

1 lb ground beef or turkey

2 onions depends on size

2 tomatoes

1 eggplant

1 squash

1 zucchini

bread crumbs

water

Mozz. cheese. shredded

Mix beef, cup of bread crumbs, 1/2c chopped onion 1/4c water.   Mix together and put into cass. dish like a pie crust.   Bake at 350 until cooked throughly.  Drain any grease.

While the "crust" is cooking cook the rest of the onion until tender.  I like to add italian seasoning and garlic.  Add in roughly chopped eggplant, and sliced zucchini and squash.  Cook until tender about 5-10 min. at med.   Then add in tomatoes.  Cook about 5 more minutes.  

Put veggies into "crust" and top with cheese.  Cook at 350 until melted.  I like to put broil on for a minute to add a little crispiness.

 

You can change up the squash and zuchinni to one or the other and sometimes I change or mix the cheeses.
