Baked Vegetable Pies

A very popular dish throughout the Middle East. They are eaten as
appetizers and snacks. There are many tasty variations; this one
from Saudi Arabia. Preparation takes some time, but are they ever
it! Once you try one, you can't stop!

3 c. flour
1/4 c. vegetable oil
1/4 tsp. salt
1 tsp. baking powder
1/2 c. yogurt
1 tsp. yeast in 1/8 c. warm water

2 large potatoes, chopped into small cubes
1/4 small bag frozen peas
2 carrots, finely chopped
1 tomato, finely chopped
1 onion, finely chopped
1 tsp. black pepper
salt if desired

1 egg yolk

To Make Dough:
Mix together flour, oil, salt, and baking powder until well blended.
yogurt and yeast mixture. Add more water if dough appears to be dry
crumbly. Knead dough until elastic, but not sticky. Divide into small
balls the size of large cherries and place on large baking sheet.
dough balls with a warm cloth for 1 hour.

To Make Filling:
Heat a small amount of oil in a large pan and saute vegetables, salt,
pepper. Cook until lightly browned and slightly softened.

Make samboosak by taking 2 small balls, pressing together and rolling
on an oiled cutting board. Place a heaping spoonful of the vegetable
mixture into the center of each circle, fold over and seal edges
Brush tops with egg yolk and bake for 20 minutes, or until golden.
