I have three kids.. my one year old eats anything given to her. My 2 and 4 year old are picky and I need new recipes to make for dinner! Can someone help?? I'll take anything I can get!
I'm Wrae. I have three kids.. Cameron (4), Julian (2) and Lillian ( 1 year). I work full time as an addictions counselor and love it. I am 26 years old. I am biracial. I did not breast feed, used disposable diapers, vaccinated all three kids, do not co-sleep ,and my house is never clean. I am from Kentucky and love it, but I am not a stereotypical Kentuckian.
This is the age when picky eaters are made or broken, so good for you for working on creating healthy eaters.
This is a bit challenging, without knowing abour your family and lifestyle, so I wll throw out some suggestion.
First, kids love to dip:fresh veggies dipped in hummus or salad dressing; fruit dipped in yogurt, whole wheat pasta and steamed veggies dipped in sauce.
Next, kids love to cook. Take your kids to the library and take out a couple of kids cookbooks (my favorite is Pretend Soup). There is a fun kids cooking website at www.spatulatta.com. Take your kids to the store, and let them each pick out a new ingredient (star fruit, eggplant, etc.); then you can find a recipe to prepare together. My daughter loves to go to the farmers market; she will talk to the farmers and pick out fruits and veggies; sometimes she gets new recipes, too.
www.vegweb.com is loaded with kid-friendly, family tested recipes.
Noodles and broccoli with peanut sauce is a favorite at my house. Thisis the basic recipe that I use; I usually leave out the tofu, though my spouse loves this with seitan. I use whole wheat angel hair pasta and steamed broccoli (usually frozen broccoli heated in the microwave. Fettuccine and Tofu with Finger-Licking Peanut Sauce
1/2 cup vegetable broth or water
1/4 cup chunky peanut butter (I use smooth)
1/4 cup soy sauce or tamari or braggs
3 tablespoons brown sugar (I use succanat, or whatever I have)
2 tablespoons rice vinegar (I use apple cider vinegar)
2 teaspoons grated peeled fresh ginger
2 teaspoons chile paste with garlic (add this to taste, a little goes a long way)
4 garlic cloves, minced
8 ounces uncooked fettuccine
1 pound firm tofu, drained and cubed (or about 2 cups chopped broccoli)
1 cup (2-inch) sliced green onions
1 cup shredded carrot
Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently (you can also do this in a glass bowl in the microwave, 10 or 15 seconds at a time). Remove from heat. Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently.

Add cheese and next 5 ingredients (through egg white) stir until well combined. Form into 4 (1/2 inch thick) oval patties. Heat oil in a lg nonstick or cast iron skillet over medium-high heat. Add patties; cook 3 min on each side or until patties are browned and thoroughly heated. To prepare spread, while patties cook, combine avocado, tomato, red onion, sour cream, lime juice, and salt. Place one patty in each pita half. Spread about 2 tablespoons of spread over patty in each pita half |
