EVOO is extra-virgin olive oil. I first coined "EVOO" on my cooking show because saying "extra-virgin olive oil" over and over was wordy, and I'm an impatient girl—that's why I make 30-minute meals!
I say this if something is so good that "yum" just isn't enough of an exclamation. The accent is on the "O" as in, "Oh! That is so good!"

I write in freehand equivalents because measuring, to me, takes away from the creative, hands-on process of cooking. Two turns of the pan with EVOO is about two tablespoons.

EYEBALL IT
I measure in my palm and use my eyes to estimate amounts; a tablespoon is a full palm of dried spices.
Cooking is about using your senses. A dish is done when it smells done and looks good to you.
Rather than dieting, I live by this rule. If you eat lean meats, lots of veggies and limit (rather than eliminating) your carbs, you can eat lots of food, still fit into your blue jeans and not worry about counting the calories.
In recipes designed specifically for kids, this means Grown-up Helper, the big person who acts as assistant to the young chef, handling heavy pots, boiling water and other tasks. It's like having a Designated Hitter, or DH, in baseball. A GH is an important member of any kid's kitchen team.

Yeah the knives were thankfully a gift. I would never have been able to afford them. I have lots of sisters so for xmas I just ask them to all pitch in on one gift. I love them, wish I knew how to use them as well as she does.

If you think about it, if others had to be "taught" how to cook and she does it all on her own and can do it without the use of special tools, then who is actually the "better" cook? Hmmmm, something to think about. I had already bought Wusthofs before she came out with her knives. They look just as good and alot less expensive than my Wusthofs.
