It's my understanding (and please correct me if I'm wrong, I don't know much) that followers of the Jewish faith go by the OT of the bible (which I know they don't call the OT because there's no NT in the Jewish religion, but you GET WHAT I MEAN :-P). I know that they don't believe that Jesus came as the "Ultimate Sacrifice." Here's my question: In the OT, there's a lot of talk of sacrificing cattle and such (Leviticus especially), which the Christians say they can disregard because Jesus's death kind of took care of all that for them; but why do the Jews no longer sacrifice cattle? (I know it's probably illegal now, but I mean to begin with...)

Oh, that's an easy one! There's no Temple in Jerusalem so there can be no sacrifices. You know the Western Wall, also called the Wailing Wall? We'll that's one side of Solomon's Temple. In order for there to be kosher (Biblically legal) sacrifices made, there has to be a temple there and it hasn't been rebuilt yet.
To go a little further, Jews do believe that there's a messiah, just that he hasn't come yet. When there's a temple, there will be a messiah (but it'll be the first coming, not the second).

Well now I'm FILLED with questions! Why hasn't the temple been rebuilt? Who's responsible for that? Are you saying that when the temple is rebuilt, the messiah will come, or that the messiah will be the one to build the temple? So all sacrifices were made at the same place? What if you sinned, but lived a thousand miles from that temple?

Sorry about the delay. I was Cafe Mommed out and needed a little break.
OK, let me see if I can answer everything. I might miss something since so many questions appeared after my first answer... more complicated questions.
So, there will only be one coming. Since that's the case, Jesus couldn't be the messiah since we don't believe that the messiah can arrive before the Temple is rebuilt.
The Temple will be built by humans in preparation for the messiah's coming. It's supposed to happen in the year 6000. It's currently 5768 so we have a while to go. The Temple will be built on the exact location where the Western Wall still stands. It's also where the Dome of the Rock is.
There have been some false messiahs who have gathered Jewish followers but those men have always been disproven after they died and never came back.
My husband got Judaism For Dummies when we were dating. That was a good resource for him to learn more about it... especially when I couldn't answer a question. I have a bad memory so I don't always get stuff right, or I can't remember it at all.
I know I missed a question or two. I'll try to add more later.

If I'm remembering correctly (and it's been a while), there were no specifically Jewish sacrifices until the time of Abraham.
