4 ounces cooked and peeled baby shrimp
1 1/2 cups shredded Havarti cheese
1/4 cup finely chopped celery
1/4 cup finely chopped yellow onions
Warm a heavy skillet over medium-high heat. Place one tortilla in the skillet and top with half of the shrimp, cheese, celery and onions. Press another tortilla on top.
Cook 2 to 3 minutes, then carefully flip the quesadilla to brown the other side for another minute or two. Remove to plate and repeat with remaining tortillas, shrimp, cheese, celery and onions. Cut into wedges and serve & enjoy :-)
