It's unpredictible. It can get very cold, but it is generally mild, not very humid with highs in the low 70s. It's not warm enough in December for the water parks, but we usually prefer the regular parks more during the winter.
Gaylord Palms always has an indoor ice sculpture exhibit in December, so that would be an extra activity that you can do during your stay.
I would expect 60's/70s usually so dress in layers... a light jacket in the morning or evening can be necessary, but in the afternoon it can be warm.
However, some days can get into the 80s, and some days may be (in the morning, mainly) as low as the 40s. So you really have to be prepared. It can hit 80 degrees for a week, a cold snap comes through and it's in the 50s in the morning, then by afternoon it's over 70, then it's getting chilly at night again.
Gets crazy (I live here 12 years and still can't get used to it).
