Pork and Potato soup

Leftover pork roast, cubed

4 large, or 6 medium potatoes, cubed

1 onion, roughly chopped

1 can, or 1 pkg frozen, black eyed peas

water or chicken stock to cover

salt/pepper/seasonings to taste

Put some oil in dutch oven, I used my cast iron one, and add the chopped onion.  Stir until translucent, then add  in the cubed roast and potatoes.  Add the black eyed peas and the water, and let it come to a boil.  Reduce to a simmer, cover, and let it cook for about 30 minutes, checking the water level often, but just to keep it from burning, it's supposed to get thick.  I made some corn bread to go with this, and my DS ate 3 helpings!
