PORK CHOPS AND SPANISH RICE

5 PORK CHOPS

2 TBSP. SHORTENING

1 TSP SALT

1/2 TSP CHILI POWDER

DASH OF PEPPER

3/4 C COOKED LONG GRAINED RICE

1/2 C CHOPPED ONIONS

1/4 C CHOPPED GREEN PEPPERS

1 (12 OZ) CAN TOMATOES

 

TRIM FAT OFF. SLOWLY BROWN CHOPS IN MELTED SHORTENING FOR ABOUT 15-20 MON. DRAIN EXCESS FAT. COMBINE SALT, CHILI POWDER, AND PEPPER. SPRINKLE OVER MEAT. ADD RICE, ONION AND CHOPPED GREEN PEPPERS. POUR TOMATOS OVER MIXTURE. COVER AND COOK ON LOW FOR 35 MIN. STIR OCCASIONALLY.
