skillet chicken parmigiana! Mmmm!

This is one of my all time favorites!! Hope you like it!


Skilet chicken parmigiana


1/4 c. canola, veggie, or olive oil

1 c. chopped onions

2 cloves garlic (minced)

1 (28oz can) crushed tomatoes

2 tsp. sugar

1/2 tsp. salt

1/4 tsp. pepper

1 tsp thyme

1 tsp. oregeno

4 boneless skinelss chicken breast halves

1/3 c. Italian style dry bread crumbs

1/3 c. grated parmesan cheese

1 egg beaten

1/2 c. shredded mozz. cheese


directions:

In 3-quart sauce pan, heat 2 tbsp. oil over med. heat. Cook onions and garlic in oil for 2 min. stirring occasionally. Stir in tomatoes, sugar, thyme, oregeno, salt and pepper. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer, stirring occasionally

Between sheets of wax paper, flatten chicken to 1/4 in. thickness. In shallow dish,  mix bread crumbs and parmessan cheese. Dip chicken into egg, then coat with bread crumb mix

In 12 in. skillet, heat remaining oil over med. heat. Cook chicken in oil 10-15 min. or until no longer pink in center. Pour tomato sauce around chicken in skillet. Sprinkle mozzarella cheese over chicken; cover and heat until melted.

Prep time: 25 min
makes 4 servings
