Tempura

I was wondering if anyone had any tempura batter recipies? Tempura chicken is my fav, but buying it is so expensive. =[ I would like to just make the better if anyone could help me I'd greatly appreciate it.

TEMPURA CHICKEN Boneless chicken breast, 4-8 pieces Eggs, beaten (as many as it takes) Cracker meal Wesson oil Cut chicken in small pieces, dip in egg, roll in cracker meal. Deep fry about 3 minutes on each side. Immediately dip each piece in sauce. Drain on paper towel. Good warm or cold. Yum! Yum! SAUCE: 3/4 c. soy sauce 1/2 c. sugar Cook until bubbly.

 

TEMPURA BATTER  

 

2 1/4 c. all purpose flour
1/4 tsp. salt
4 1/2 tsp. baking powder
2 tbsp. granulated sugar
2 eggs
1 3/4 c. milk
1 tbsp. melted butter

 

Beat eggs, mix in milk and melted butter. Mix flour, salt, baking powder and sugar. Stir into egg mixture. Mix until smooth. Heat fat in fryer to 360 degrees.

Dip vegetables, Chicken,  fish, and shrimp into tempura batter and place in strainer in fry basket to drain off excess batter. Place in fry basket, filling only 1/3 full. Stir occasionally to keep items from sticking together. Fry for 3-4 minutes until golden brown.

CAUTION: Filling the basket more than 1/3 full may cause grease to bubbly up and overflow when tempura is placed inside.
