Tonight is meatless night at our house. Here is what I'm making
Brandie's Bean & veggie Soup
Chicken Broth (2 cans)
Water (1 to 2 cups)
1 lbs white beans dry (soaked over night)
2 celery ribs (chopped)
2 carrots (chopped)
4 potatoes (peeled & chopped)
1 small onion (chopped)
2 garlic cloves (minced)
1 Ham hock (optional)
Italian Seasoning, basil, thyme, rosemary, 2 bay leaves, salt and pepper to taste. ( I don't measure my seasoning I just add a little at a time till I get the taste I want)
1.) cook beans on stove top till soften
2.) Sweat out all the veggies
3.) place everything in the slow cooker for 4 to 6 hrs on high heat or 8 to 10 hrs on low heat.
4.) Serve with a little grated cheese, crackers, or bread
Enjoy...
****This recipe also works well with lentils in place of the beans****
It was very yummy...Good part is it also freezes well. So now I have for another time when I don't feel like cooking :)
